Hi loves, Finally I am back after a few days of hiatus.
I finally pull myself together to blog again.
Being a stay at home-mom is quite enjoyable but stressful at same the time.
I enjoyed being a hands on mom,don't get me wrong.
But waking up everyday doing the same thing over and over again nah is quite boring.
Plus in our place grocery stores even parks are so far from our area, so no fun at all.
We are actually saving and planning to move out maybe next year.
Today , as we got up this morning my daughter came up to me and tell me that she wants banana muffin for breakfast:) ..i was like fine since this is so easy to do, so thought why not share the recipe to you. This is recipe is so easy as 1..2...3!
Ingredients :
2 cups all purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup butter (unsalted)
1/4 teaspoon salt (if you will use salted butter,omit the salt)
2 free range eggs
1/2 cup brown sugar
2 1/2 mashed banana(make sure that this is a ripe banana
1 cup of semi sweet choco chips (optional)
or
1 cup pistachio nuts
Procedure:
Simply combine all the the dry ingredients. Then add the liquid ingredients. Add in the mashed banana mix well,but do not over mix.
Lastly add the toppings that you want.
Bake it at 350F for 20 mins or until the skewer comes out clean.
Tips: For the chocolate chips i find that combining it with at least 2 tablespoon of flour before putting it in the mixture helps chocolate chips not to shrunk.
